This has been a fantastically busy week! Monday I had the Channel 3 interview about our ranch and beef, which was great fun. Tuesday was spent doing work for my husband's financial business while he's gone with the Reserves. Wednesday we worked around the house on projects. Thursday was more work for hubby and reviewing proofs for some pictures that I had made of the girls. Friday we all got haircuts and I signed the girls up for their first session of swimming lessons this year. So far today I've been working on beef invoices for our customers who are taking delivery of their beef this month.
All of that is a long-winded way to say that I'm truly looking forward tonight to making meal #1 for the One Local Summer event that I'm participating in again this year. For more info, click on the One Local Summer button on my sidebar. Basically, participants agree to make at least one meal each week from entirely local ingredients, then they share their meals with other participants online from across the country!
On the menu for tonight:
~ Pork Chops from our very own M4-D Ranch Pastured Pork, raised within 60 miles of our home.
~ New Potatoes purchased this week from our local Farmer's Market and grown within 50 miles of our home.
~ Purple Hull Peas from our freezer that were purchased last year at our local Farmer's Market and also grown within 50 miles of our home.
~ Red Cyn wine from Old Medina Winery located about 70 miles from home.
