One Local Summer~Week 4

Most days of the week we have various components in most of our meals that use local ingredients. This week we had our primary One Local Summer meal on Saturday evening. It was delicious! We finished up a week of swimming lessons and some beef deliveries and a nice, local, homecooked meal just hit the spot!

Here's what was on our menu (of course, luck would have it that my camera battery was dead - so sorry no photo this week!):

~ Pork chops from our very own M4-D Ranch Pastured Pork - floured and lightly fried in a little bit of olive oil.

~ Corn on the cob - from our freezer that we purchased at last year's Farmer's Market - grown by a little family within 50 miles of us. Butter from a mennonite dairy that's about 100 miles away.

~ Black-eyed peas from my freezer that were purchased at last summer's local Farmer's Market - grown within 60 miles of us.

This week I'm making some homemade items with apples from our backyard apple tree - we just had our first small harvest and a homemade apple cobbler is on the agenda for Tuesday! As more begin to ripen on the tree, I also plan to make some apple cobbler preserves, apple butter and apple sauce. All family favorites!

Also, some of our eggplant and squash are starting to come in on our backyard garden plants - so I'll see if I get to incorporate any of those into a meal this coming week ~ yum!

With the prices of vegetables and fruit going up, this is a good idea. I do the same thing, can tomatoes, freeze bluberries, make reaspberry jam. It's all good!
